Try this Cucumber and Avocado soup! You’ll love it!

Soups are great when it comes to nutrition because they are prepared with lots of vegetables and also, additionally, they taste amazing! So, we bought this wonderful recipe of Cucumber and Avocado soup that is loaded with nutritional vegetables. Below is the recipe.

Ingredients:

Cucumber – 1
Avocado – 1 ripe but still firm
Spring onions – 20g
mint leaves – 1tbsp
buttermilk – ½ cup
lemon juice – Few drops
Cold water – 1/4th cup
Salt as per taste

Process:

1. Chop 2/3 of the cucumber coarsely into chunks and prepare ½ of the avocado the same way.
2. In a blender, make puree together with the chopped cucumber, chopped avocado, spring onions, mint, buttermilk, lemon juice, water and salt until smooth.
3. Now, add a bit more water if it is too thick.
4. Chop remaining cucumber and avocado into small pieces and add to the soup. Stir well
5. Chill soup before serving.
