Capsicums are very healthy and we strongly recommend that everyone should include these in the meals. So, we are here to present the health-giving stuffed capsicum. Read on and give a try for sure.
Ingredients:
Capsicum – 2 (cut into halves)
Potatoes – 100g (boiled & mashed)
Cumin powder – ½ tsp
Coriander powder – ½ tsp
Chilli flakes – 1/4th tsp
Coriander – Few sprigs chopped
Lemon juice – ½ tsp
Salt – ¼ th tsp
Oil – 1 tbsp
Process:
1. In a bowl, take mashed potatoes. Add little water and mix it well.
2. In a Non- stick pan, add oil and spread it well.
3. Now, prepare the stuffing for the capsicums by adding mashed potatoes, cumin powder, coriander power, chilli flakes to the oil and let it cook on medium flame.
4. Now, add salt as per taste.
5. Finally, before removing the mixture from the stove, add lemon juice and coriander sprigs.
6. Now, let the mixture cool down.
7. Then, stuff the capsicums with the mixture and fry them with little oil in the pan for few minutes.
8. Later, flip them to the other side and cook.
9. That’s it. Your stuffed capsicums are ready.
10.Enjoy it with sauce or curd or mint chutney.
